Here in Ireland the fresh leeks are amazing, and the smell of them (chopped raw) filled the house last time. Highly recommended - </p><p>Ingredients, Serves 2</p><p>1 tbsp&nbsp;olive oil<br>1 tsp&nbsp;fennel seeds<br>2&nbsp;carrots, diced<br>2&nbsp;celery sticks, diced (I prefer a sweet red pepper) <br>2&nbsp;garlic cloves, finely chopped (or more 😋) <br>2&nbsp;leeks, thinly sliced<br>400g&nbsp;can chopped tomatoes (the best you can afford eg. think Mutti, Cirillo) <br>500ml&nbsp;hot fish stock heated to a simmer<br>2&nbsp;skinless pollock / white fish fillets (about 200g), thawed if frozen, and cut into chunks. But I only eat lunch outdoors, and these figs seem to be very attractive to bees, so I've been afraid to open the bag.</p><p>So now I have a bag of bruised figs. They got frozen in a below-temp mini fridge too.</p><p>So - fig compote? Other suggestions?</p>
