Natasha Jay<p>Recipe: 'Quick and easy fish stew' 🐟🦐</p><p>Such a great simple healthy recipe. Here in Ireland the fresh leeks are amazing, and the smell of them (chopped raw) filled the house last time. Highly recommended - </p><p>Ingredients, Serves 2</p><p>1 tbsp olive oil<br>1 tsp fennel seeds<br>2 carrots, diced<br>2 celery sticks, diced (I prefer a sweet red pepper) <br>2 garlic cloves, finely chopped (or more 😋) <br>2 leeks, thinly sliced<br>400g can chopped tomatoes (the best you can afford eg. think Mutti, Cirillo) <br>500ml hot fish stock heated to a simmer<br>2 skinless pollock / white fish fillets (about 200g), thawed if frozen, and cut into chunks.
