Though I really should remember to eat more when going out for tiki drinks, they're usually pretty damn strong and go down easy.</p><p>Had a good long chat with the bartender at the pop-up, who was the former owner of my favorite DC tiki bar (Archipelago and the Lost Island secret room). Really nice guy who is just having a really fun time running this pop-up.</p><p>He makes a mean Jet Pilot!</p>

Open pour, top with more crushed ice, and garnish.<br> <br> I know what you're thinking, it's barely a Mai Tai.. but still, it has orgeat and packs a punch on a sunny afternoon 🤣 This version comes from Lui Fern's channel on IG, but when I searched around I found several variations. Original garnish calls for fresh pineapple chunk, Lui used dehydrated, but I had peaches around and felt it complemented the bourbon and peach liqueur. Another hot day, another #rum beverage…
A Navy Grog in the best one I’ve ever had, made by Garret Richard in the Slowly Shirley days.
He combined the Donn Beach at Victor Bergeron styles meaning a split of honey syrup and pimento dram, and used a split of El Dorado 8, Denizen Merchant’s Reserve, and Appleton 12.
Use the original recipe as a template with those ingredients and you’ll come close.

NAVY GROGU

¾ oz lime juice
¾ oz pineapple juice
¼ oz SC Mai Tai syrup
a few drops of blue curaçao
¼ oz allspice dram
¼ oz falernum
1 oz overproof Pot Still Lightly Aged Rum ❶
1 oz Rhum Agricole Blanc ❼

Garnish: lime wedge, maraschino cherry
Method: Combine all ingredients in a shaker with ice. Shake, open pour, and top with more ice. Spear two cherries for the eyes, and use two lime wedges as your garnish so it looks as if the Force is strong with this one.

¾ oz lime juice
¾ oz passion fruit syrup
¼ oz coconut cream
½ oz absinthe
1 oz Blended Lightly Aged Rum ❷
1 oz Blended Aged Rum ❸
Float of overproof Pot Still Unaged Rum

Garnish: mint sprig, lime wheel
Method: Combine all ingredients except rum for the float in a shaker with crushed ice and shake. Open pour into glass, top with ice, float the rum, and garnish.

A lovely potion that can please everyone on the tiki spectrum: tame enough for a beginner, but still has enough in there to interest a veteran. Original by theweekendmixologist on IG.
