Perfect day with my family on my only full day off this week. Mom & I went for nature walk in the morning. We tended to gardens together in afternoon, after a nice picnic lunch by the sea. I gave her a fun diamond painting kit & she's working on that now.

This evening, I tried out a Himalayan spicy chicken & vegetable soup recipe - thukpa. Made some naan bread to dip in soup too. I made it without noodles because the carb is the naan bread for this homemade version.

Thai larb recipe (larb moo ลาบหมู) or minced pork salad 🇹🇭

Making this recipe tonight as, it's so warm here in Cork ☀️

Recipe type: Salad
Serves: 1 - 2

Ingredients

Pre-ingredient
About 5 tablespoons of uncooked Thai sticky rice (I am using Jasmine rice, see recipe)

Main ingredients
300 grams (1 pound) minced pork (minced chicken or minced beef will also work well)
1/2 - 1 tablespoon of chili flakes (prik bon)
1/8 tablespoon of sugar (just a pinch)
1 tablespoon of fish sauce
2 - 3 limes, the juice
3 - 4 small shallots (Thai shallots are only about the size of grapes, so if you have bigger shallots just use however much you want)
A few leaves of Coriander
3 - 5 spring onions (green onions)
About 20 leaves or so of fresh mint

I was at hospital getting IV antibiotics yesterday for several hours. I got an infection from my gums bleeding out & it spread quickly. I needed strong antibiotics IV treatment; the amoxicillin pills weren't effective enough.
I had to take today & tomorrow off work to recover - unable to talk ATM. I'll be updating more this afternoon, with some new photos & my dentures fundraiser - 2 small donations came in since last update 🙏
My morning tasks today -> Call some clients, talk to my substitute workers to confirm all schedules/client notes were received & organize family prescription pickups with a friend who is helping me out with personal errands on her day off.

Early morning, I made some Chả Cua Trứng Hấp - #Vietnamese Egg & Crab meatloaf. I can't have any of it until tonight or tomorrow - when my mouth isn't in as much pain.

I only use real crab meat & consider it sacrilege to use fake crab meat because the flavours are not the same at all. Fake crab meat doesn't even taste anything like real crab. Even canned real crab meat is better than that plastic looking & gross tasting fake crab meat. I wouldn't bother making this dish if you can't get real crab meat.

To make junket, purchase junket tablets from the supermarket and follow the instructions. The recipe on my pack involved dissolving a junket tablet in 1 Tblspn cold water. Then heating 500ml milk to 37C with 2 – 3 Tblspn sugar and 1 tspn vanilla – if it is hotter, let it cool to temperature. Add the dissolved junket tablet to the milk, mix well, and pour into serving dishes. Allow to set for 15 mins at room temperature then chill in the fridge.

Note that different flavourings can be used.

I see that #gravy is trending and I understand the assignment. My favourite #recipe for gravy is:
2 cups heavy water
1/2 mg Magnesium (yes, that really is 1/2 mg Mg)
3 parts swarfega
2/3 dash of tabasco
288 whole fried chickens.

You basically throw it all in the pan, let it simmer for 43 seconds, strain and serve hot or cold on hessian sacks. Mmmmm, delicious.
